modular oven – Electric static oven with modular elements, with one or more independent overlapped decks, very sturdy, functional and provided with a modern design, conceived for bread and/or pizza baking.
– It is available a wide series of baking deck dimensions, for every need.
– Control of the baking deck with an electronic card of validated reliability (it is the same electronic card we have used for years for the ElettroReal ovens series).
– Heating process with electric stainless stell ironclad resistances.
– Glass doors with useful different heights: 16, 22 and 28 cm.
– External structure builted in scotch-brite stainless steel.
– Hood with 2 speed aspirator (optional) or hood with power control of the composition and programmed starting with electronic card (optional).
– Steamer with solenoid valve managed directly by the baking deck (optional).
– Proofing chamber, trayholder box or lower support, for the final composition (optional).

 

 

MODULAR OVENS

MR-1
is the most versatile and complete oven of Real Forni’s
range. Suitable for cooking bread, pizza, pastry and cookery
this oven marks the difference for its resistant construction
and for the materials that have been selected
for guaranteeing high level cooking and long duration
over time. In the baking chambers it is possible to collocate
a powerful steam unit which is always suggested
when baking bread. Modular baking elements need to be
insulated at the top and bottom when in the presence of
more than one modular element. In this way it is possible
to have even up to five modular elements overlaid and
easy accessible without increasing too much the height of
the composition.

MR-1 is a modular oven with electric working conceived
to be flexible. The many possibilities to combine
the oven with leavening chamber, support and extractor
hood enable the user to find the ideal solution for
all types of work. Moreover it is possible to modify the
combination after a time by adding new chambers or
optional accessories like a steam unit or support with
extractable shelves.

HOOD 

– It is provided with a silent aspirator, managed by a simple swich on-off.
– It is directly connected to the baking decks for a fast steam discharge.
– It includes an efficient insulation for the lower deck.

HOOD with OVEN MANAGER

– Provided with a silent aspirator monitored by the oven.
– It is directly connected to the baking decks for a fast steam discharge.
– It includes an efficent insulation for the lower deck.
– Maximization of the power through the oven manager for a better temperature regain of the single decks; it is possible to set up the extreme available power of the whole composition.
– Weekly programmed oven starting, until 3 different times per day.

UPPER - LOWER INSULATION

– In case of a composition without hood, it is neccesary to place an insulation closing panel on the upper deck.
– If the composition does not include a lower support or a proofing chamber/trays closet, it is necessary to put an insulation closing panel on the lower deck.

STEAMER

– It is possible to install a steamer (optional) inside each deck, in the latter end, without increasing the space of the composition.
– It is managed directly by the chamber electronic card through which it is possible to set up the STEAMER starting/turning off, the steamer temperature and the opening/closing of a solenoid valve with a handy timer, to supply the necessary water to produce steam.
– The steamer is conceived also for after-sale installation, and it is not necessary any modification because there are already all the mechanical and electrical connections.

 

MODULAR OVENS PROOFING CHAMBER

– Strong stainless steel structure to support various baking decks.
– Available for the whole range, with different heights to satisfy all requirements.
– Lower support with legs or wheels to easily move the oven.
– Integrated insulation for the lower baking deck.
– Easy control panel composed of one switch for starting and turning off and of a digital thermoregulator to control automatically and quite precisely the inner temperature.
– The internal bowl which contains water allows to develop the necessary moisture for the rising process.
– In the lower part there is a condensation water discharge.
